Pakistani Kheer Recipe(Rice Pudding)


Ingredients:

  • Basmati rice ¼ Cup (Soaked for 1 hour)
  • Milk 1 liter
  • Sugar ½ Cup
  • Cardamom powder ¼ tsp
  • Almonds Blanched & chopped 2 tbs
  • Khoya 50 gms
  • Kewra water ½ tsp
Directions:

1.Slightly grind rice in a spice mill or in zip lock bag,add soaked rice and slightly crushed.

2.In pot,add milk and bring it to boil,add crushed rice and cook for 8-10 minutes, keep stirring in between.

3.Add sugar,cardamom powder,mix well and cook on low flame for 10-15 minutes or until rice are cooked and keep stirring in between.

4.Add almonds and khoya,mix well.

5.In the end,add kewra essence and give it a good mix.

Rice Kheer is ready to serve.

  • اجزاء:
  • باسمتی چاول ¼ کپ (1 گھنٹے کے لیے بھگوئے ہوئے)
  • دودھ 1 لیٹر
  • چینی آدھا کپ
  • الائچی پاؤڈر ¼ چائے کا چمچ
  • بادام بلانچ اور کٹے ہوئے 2 چمچ
  • کھویا 50 گرام
  • کیوڑا پانی آدھا چائے کا چمچ


ہدایات:


1. چاولوں کو مسالے کی چکی میں یا زپ لاک بیگ میں ہلکا سا پیس لیں، بھیگے ہوئے چاول ڈالیں اور تھوڑا سا کچل لیں۔


2. دیگچی میں دودھ ڈال کر ابال لیں، پسے ہوئے چاول ڈالیں اور 8-10 منٹ تک پکائیں، درمیان میں ہلاتے رہیں۔


3. چینی، الائچی پاؤڈر ڈالیں، اچھی طرح مکس کریں اور ہلکی آنچ پر 10-15 منٹ تک پکائیں یا جب تک چاول پک نہ جائیں اور درمیان میں ہلاتے رہیں۔


4. بادام اور کھویا ڈالیں، اچھی طرح مکس کریں۔


5. آخر میں کیوڑا ایسنس شامل کریں اور اسے اچھی طرح مکس کریں۔


چاول کی کھیر پیش کرنے کے لیے تیار ہے۔

Ingredients:


  • 1/4 cup short grain rice(40 - 50 Gms)
  • 8 - 9 Cashews
  • Pistachios
  • Rasins
  • Almonds
  • 8 -9 Green Cardamom
  • 1.5 Litre Full Fat Milk
  • 7 -8 Tbsp Sugar (100gms)
  • Kesar

Directions:

1.Soak Rice for 30 minutes and in another bowl soak cashews for 30 minutes as well.

2.Crush the 8-9 green Cardamoms.

3.In a large metal wok add half cup of water and with it add 1.5 litre of full fat milk and wait for boiling.

4.In a grinder add 1tbsp of soaked rice and soaked cashews and make a fine paste.

5.Take out 1 cup of milk from boiling milk and add kesar for color.

6.Strain the rice and add it in boiling milk on high flame for 12 minutes,at this point add the mixture of rice and cashews and kesar milk also and cook it for 2-3 minutes , at this point sugar according to your taste.

Delicious Instant Rice Kheer is ready to serve.


4. Kheer Recipe with Condense Milk

Ingredients for Kheer Mix:
Rice 1 cup Sugar 1 cup Cardamom powder 1 tbsp Almonds 1/4 cup Ingredients for Kheer:
Milk 2 L Kheer mix 1 cup Condensed milk 1/4 cup Ingredients for garnishing:
Almonds (chopped) as required Pistachios (chopped) as required Silver leaf as required Directions for Kheer Mix Preparation:
1.In a grinder separately grind rice, sugar, almonds and set aside.
2.Now in a bowl add ground rice, sugar, almonds, cardamom powder and mix well.
3.Store in an air tight jar and save for 1-2 months.
Directions for Kheer Preparation:
4.In a pot add milk and bring it to boil. Add kheer mix and stir & cook on low flame for 20-25 minutes.
5.Now add condensed milk and cook for 2-3 minutes.
6.Garnish it with almonds, pistachios and silver leaf and serve.

5.Caramel Kheer Rice Recipe

Ingredients:

  • 1 liter milk
  • 1/4 cup soaked rice ( 50 g )
  • dry fruits
  • 1/2 cup sugar ( 100 g )
  • 1/3 cup condensed milk

Directions:

1.Take 1 liter milk and cook on high flame until milk boils.

2.After 1 boil in milk we will add 1/4 cup soaked rice ( 50 g ) and cook on lower medium flame for 20-25 minutes and add dry fruits at this point.

3.For making caramel take a pan and add 100 g(1/2 cup) of milk and 2-3 tbsp of water ,cook it until sugar is caramelized ,cook it on medium slow heat,keep in mind don't overcook the caramel ,when all sugar dissolves and sugar is caramelized at this point add 1/3(100g) cup of water and cook it until water and caramel dissolves and mixed well then turn off the flame.

4.After cooking of kheer for 20-25 minutes add condense milk and caramel,mix well and turn off the flame.

5.Caramel Kheer Rice Recipe is ready to serve.

Ingredients
  • 2 tbsps short grain rice
  • 1 litter full-fat milk
  • ¾ cup sugar
  • ½ tsp green cardamom powder
  • ½ tsp rose water
  • 2 tbsps almond, chopped
  • 2 tbsps Pistachios, slivers

Directions:
1. Wash rice for 2-3 times, add sufficient water and soak it for 20-25 minutes.
2. Add milk in a non-stick pan, add soaked and drain rice, bring milk to a boil and cook till rice is done.( continue mixing)
3. Mash rice with the help of the spoon and add sugar , green cardamom powder and mix well. Cook for 5-6 minutes on a medium heat.
4. Add almond, pistachios and mix well.
5. serve hot.

Rice Kheer Recipe (Chawal Ki Kheer ) is ready to serve.


7. Vermicelli Kheer Recipe

Ingredients:
  • 1/2 ltr Milk
  • 1/3 cup roasted Vermicelli (Seviyan)
  • 1/2 cup Sugar
  • 1/2 tbsp Ghee (Clarified Butter)
  • Almond Flakes
  • 1/2 tsp Cardamom Powder
  • 1 tbsp Raisins
Directions:

1. Heat Ghee in a pan and roast the Vermicelli for a couple of minute.
2.Add the milk, stir it and let it cook for about 7 - 8 Mins till the the milk reduces to half its quantity.

3.Add sugar, stir and cook it for another 5 - 6 Mins.
4. Add raisins, almond flakes, cardamom powder and stir everything well.
5. The dessert is ready to be served chilled in serving bowls


Vermicelli Kheer is ready to serve.


8.Kheer Recipe Gujrati

Ingredients:

  • 2 litre full fat milk
  • ½ cup or 100grm small grain rice
  • 1 tbsp ghee
  • 3 tbsp almond slices
  • 3 tbsp cashews slices
  • 2 tbsp pistachio slices
  • 1 tbsp charoli
  • 1 cup milk to cook rice
  • ½ cup water
  • 1 cup sugar according to your taste
  • ¾ tsp cardamom powder

Directions:

  • In a mixture jar, add ½ cup rice and slightly grind it on pulses.
  • Wash rice with water and keep it aside.
  • Now in a pressure cooker, add 1 tbsp ghee. Then add almond slices, cashews slices, chirodi, and pista slices. Sauté for a minute. Take it out into a plate and keep it aside.
  • Now add rice and sauté for a minute. Then add 1 cup of milk and ½ cup of water. Cover and pressure cook rice on a medium flame for 2 whistles.
  • When the cooker is completely cool down, check the rice and mash it slightly.
  • Now in heavy bottom kadai, add some water and 2-liter milk and bring it to boil.
  • Then add cooked rice and mix well.
  • simmer and cook for 15-20 minutes or until milk thickens.
  • Then add sugar and stir well.
  • Also, add roasted dry fruits and mix well.
  • boil for 5 minutes or until the kheer turns creamy and sugar is dissolved completely.
  • Then add ¼ tsp cardamom powder. Mix well.
  • Enjoy rice kheer hot or chilled for a week when refrigerated.
