1.Zarda Recipe By Food Fusion


Zarda Recipe By Food Fusion



Ingredients:

  • Water 8-10 cups
  • Salt ½ tsp
  • Water ¼ cup
  • Zarda food color 2tsp
  • Rice (sella) 1 & ½ cup (soaked for 4 hours)
  • Ghee ½ cup (Preferably desi ghee)
  • Green cardamom 3-4
  • Cloves 3-4
  • Sugar ¾ cup or to taste
  • Kewra essence 1tsp
For decoration:

  • Ashrafiyan
  • Dry fruits/nuts
  • Pheeka khoya
Direction:

1.In a pot,add water, bring it to boil.

2.Add salt. Dissolve zarda food color in water ,add it to pot and mix well.

3.Add rice and bring it to boil,cook until rice are done.

4.Strain rice and set aside.

5.In a separate pot,add ghee,green cardamom and cloves,saute for a minute.

6.Add boil rice, sugar.Cover and cook until sugar completely dissolves (approx.10-15 minutes) on medium low flame.

7.Place griddle on stove and put back pot over griddle.

8.Put it on simmer for 10 minutes.

9.Add kewra essence,ashrafiyan,pheeka khoya,dry fruits/nuts.

10.Cover and steam cook for 10 minutes.

11.Zarda is ready, add gulab jamun and chum chum for garnishing.

Ingredients:

  • Boiling water as required
  • Rice sella ½ kg (soaked)
  • Salt) ¼ tsp
  • Green cardamom 4
  • Cloves 6
  • Yellow food color 1 tsp
  • Milk ½ Cup
  • Sugar 1 & ½ Cups-Ghee ½ Cup
  • Cloves 6
  • Green cardamom 4
  • Almonds 20-25
  • Pistachio chopped 20-25
  • Coconut sliced ¼ Cup
  • Raisins 2 tbs
  • Khoya 150 gms-Khoya 350 gms
  • Ashrafiyan ¼ Cup
  • Gulab janum
  • Cham cham
Directions:

1.In boiling water,add rice,salt,green cardamom,cloves and mix.

2.Add yellow food color,mix and boil until rice are ¾ th done then strain & set aside.

3.In saucepan,add milk,sugar and mix well,bring it to boil and cook until sugar is dissolved & set aside.

4.In pot,add ghee and let it melt,add cloves,green cardamom and mix.

5.Add almonds,pistachios,coconut and mix well.

6.Add raisins and fry for 2 minutes then take out half quantity of nuts and reserve for garnishing.

7.Now pour milk syrup,mix well and cook for 2-3 minutes.

8.Add khoya and mix well.

9.Add boiled rice,mix well and cook on low flame until dries up (approx.5-6 minutes).

10.Add khoya and ashrafiyan,cover and cook for 5 minutes.

11.Take out in a serving dish,add zarda and garnish with fried nuts,gulab janum,cham cham & serve!

اجزاء:

پانی 8-10 کپ
نمک آدھا چائے کا چمچ
پانی ¼ کپ
زردہ فوڈ کلر 2 چمچ
چاول (سیلا) 1 اور ½ کپ (4 گھنٹے تک بھگوئے ہوئے)
گھی آدھا کپ (ترجیحا دیسی گھی)
سبز الائچی 3-4
لونگ 3-4
چینی ¾ کپ یا حسب ذائقہ
کیوڑا ایسنس 1 چائے کا چمچ
سجاوٹ کے لیے:

اشرفیاں
خشک میوہ جات / گری دار میوے
پھیکا کھویا

سمت:
. ایک برتن میں پانی ڈال کر ابال لیں۔

نمک شامل کریں۔ زردہ فوڈ کلر کو پانی میں گھول کر برتن میں ڈالیں اور اچھی طرح مکس کریں۔

چاول ڈال کر ابالیں، چاول بننے تک پکائیں۔

چاول چھان کر ایک طرف رکھ دیں۔

ایک الگ برتن میں گھی، ہری الائچی اور لونگ ڈال کر ایک منٹ کے لیے بھونیں۔

ابالتے ہوئے چاول، چینی شامل کریں۔ ڈھک کر پکائیں جب تک چینی مکمل طور پر تحلیل نہ ہو جائے (تقریباً 10-15 منٹ) درمیانی آنچ پر۔

کڑوی کو چولہے پر رکھیں اور برتن کو پیالے پر رکھ دیں۔

اسے 10 منٹ کے لیے ابالنے پر رکھ دیں۔

کیوڑا ایسنس، اشرفیاں، پھیکا کھویا، خشک میوہ جات/گری دار میوے شامل کریں۔

ڈھک کر بھاپ میں 10 منٹ تک پکائیں۔
۔زردہ تیار ہے، گارنشنگ کے لیے گلاب جامن اور چم چم ڈالیں۔

Ingredients:

  • 2 cup Rice
  • 1-1/2 cup Sugar
  • 1-1/2 cup Khoya 
  • 1/2 cup Desi ghee
  • 2tbsp yogurt
  • Sliced coconut 10-15 slices
  • Raisins 2tbsp
  • Soaked sliced almonds 20-25
  • Pistachio 1tbsp
  • Yellow Food color 2-3 pinches or the colour you like
  • 3 inches long Cinnamon
  • 7-8 cloves
  • 6-8 cardamoms

Directions:


1.almost full the pan with water and add 1/2 tsp of food color and then put rice without being soaked.add 3 inches long Cinnamon,5-6 cloves,4-5 cardamoms and cook the rice 85%.

2.Now in another pan add desi ghee and left cardamoms and clove and sugar along with yogurt,add coconut and raisins,mix well and when the sugar melts add the boiled rice ,mix well and cook on high flame.when bubbles start to lower ghee becomes visible add almonds,pistachios,khoya and simmer for 5-8 minutes.

3.Delicious Zarda with faiza is ready to serve.

Ingredients:

  • Boiled sela rice ½ kg
  • Cardamom 3
  • Clove 4-6
  • Sugar ½ kg
  • Whole dried milk 250 grams
  • Mix dry fruits as required
  • Tutti frutti as required
  • Orange peel 4 tbsp
  • Clarified butter ½ cup
  • Cardamom 3-4
  • Yellow color as required
  • Screw pine essence 1-2 drops
  • Sterling silver leaf 1
  • Cloves 3-4
  • Water as required
  • Water 2 cups



  • Method
  • • Add cloves, cardamom and yellow color in rice and boil them until rice are fully done. Then strain rice from water and leave them aside. • Now heat clarified butter in a pan; fry cardamom and cloves in it. • Then add sugar and 2 cups of water. • When it starts to boil and sugar melts, then add in rice. • When sugar syrup got absorbed then add screw pine essence and let it simmer. • When it gets done then mix in half of whole dried milk and dish it out.

Ingredients:

  • 9 cups water
  • 1/2 tsp of yellow color
  • 7 pieces of green cardamom
  • 1/2tsp of kewra essence,
  • 3 cups of sella rice soaked 
  • 1/2 cup of butter
  • 5-6 cardamoms
  • 3 cup sugar 
  • 2 tbsp almonds sliced
  • 2 tbsp pistachios
  • 2 tbsp raisins
  • 2 tbsp coconut
  • 2 tbsp walnuts
  • 4tbsp Dried fruits ashrifs 
  • 7-8 gulab jamun.

Directions:

1.in a 9 cups of boiling water add 1/2 tsp of yellow color,7 pieces of green cardamom,1/2tsp of kewra essence,3 cups of sella rice soaked before and cook rice until 75%.


2.Now in a pan add 1/2 cup of butter ,add 5-6 cardamoms,saute for 30 secs ,now add zarda boiled rice and mix along with this add 3 cup sugar ,cover the lid and cook on slow heat for 5 minutes.


3.After 5 minutes add dry fruits ,almonds,pistachios,raisns,coconut,walnuts,now simmer rice for 20 minutes on medium flame,now after 15 minutes turn off the flame and add red and green ashrafis,our zarda is ready and dishout.Sprinkle left over dried fruits ashrifs and gulab jamun.

Delicious Zarda is ready to serve.


7.Punjabi Zarda Recipe

Ingredients:

Ingredients:

  • 8 class of water
  • 2 star anise
  • 1 black cardamom,
  • 5-6 green cardamom
  • small piece of cinnamom stick
  • 4-5 cloves 
  • 1/2 tbsp of ghee , 
  • yellow color 1/2tsp  
  • 2 cups of sella rice
  • 400 gram sugar 
  • 1/4th cup milk 
  • 1/4 cup yogurt 3 tbsp ghee 
  • all dry fruits that you like
Directions:

1.In a pan add 8 class of water and add 2 star anise ,1 black cardamom.5-6 green cardamom,small piece of cinnamom stick,4-5 cloves and add half tbsp of ghee , now in boiling water add yellow color 1/2tsp and add 2 cups of sella rice ,we have to cook them 100% on high flame and then strain the rice.


2.In a pan now add 400 gram sugar ,1/4th cup milk ,1/4 cup yogurt ,cook it on medium flame until sugar melts ,when sugar completely melts add 3 tbsp ghee and melts the ghee on high flame and add rice ,mix well ,keep cooking on high flame add cardamoms and raisins and all the dry fruits you like and cover the lid and simmer for 20 minutes on low flame




9.Paksitani Zarda Recipe


Paksitani Zarda Recipe


Ingredients:

  • Coconut Zarda Recipe
  • Rice guard sella 2 cups
  • Sugar 2 cups
  • Cardamoms 4-5
  • Cloves 6-7
  • Coconut milk 1/4 cup
  • Coconut crushed as required
  • Murabba 1/4 cup
  • Coconut slices 1/4 cup
  • Dry dates (deseed) 5-6
  • Ashrafi (green & red) 1/4 cup
  • Raisins 1/4 cup
  • Khoya 1/2 cup
  • Desi ghee 1/2 cup
  • Yellow food color as required

Directions:

1.In a bowl add water and soak rice for 90 minutes as per the instructions on the pack.

2.Now in a pan simmer water, add cloves, cardamom, yellow food color, soaked rice and cook until 80% done. Strain and set aside.

3.In a pan heat ghee, add layer of boiled rice, sugar and repeat this layering process.

4.Drizzle milk on top, cover lid and simmer for 5 to 8 minutes or until sugar melts.

5.Now top it with dry dates, murabba, raisins, ashrafi, coconut slices, coconut crushed, khoya and cover the lid again.

6.Simmer again on medium low flame for about 10 minutes and your zarda is ready.

Serve steamy tasty coconut zarda and enjoy your meal.


10.Easy Zarda Recipe


Easy Zarda Recipe


  • As needed Water
  • ½ tsp Yellow Color
  • 2 tbsp Cooking Oil
  • 3 tbsp Desi Ghee
  • 5g Cardamom
  • 4 Cloves
  • Half cup Milk
  • 700g Guard Rice
  • 1 cup Sugar
  • 15g Almond
  • 15g Cashew
  • 15g Pistachio
  • -20g Tutti Frutti (green & red)
  • 100g Rasgulla

Cooking Method

1- In a bowl, add Guard Rice and soak for 90 minutes.

2- In a pan, add water, yellow color, cooking oil and bring to boil

3- Now, add soaked rice and bring to boil.

4- Now, in a pan, add desi ghee, cardamom, cloves, milk and bring to heat.

5- Now, add boiled rice, sugar, almond, cashew, pistachio, tutti frutti, rasgulla and simmer for 3-4 minutes, then mix it.

Your sweet Zarda now ready to serve.
