5.Kashmiri Chai (Pink Tea) by Sooper Chef
Ingredients:
For Kehwa:
-Paani (Water) 4 cups
-Kashmiri tea leaves 4 tsp
-Badiyan ka phool (Star anise) 1
-Cloves (Laung) 3-4
-Elaichi (Cardamom seeds) crushed ½ tsp
-Namak (Salt) ½ tsp or to taste
-Baking soda ¼ tsp
-Thanda pani (Chillled water) 2 cups
For Kashmiri Tea:
-Doodh (Milk) 2 & ½ cup
-Badam (Almonds) crushed ½ tbs
-Pistay (Pistachio) crushed ½ tbs
-Cheeni (Sugar) to taste (optional)
-Kehwa 4 tbs or as required
-Badam (Almonds) crushed for garnishing
-Pistay (Pistachio) crushed for garnishing
Direction:
-In kettle, add water,kashimiri tea leaves,star anise,cloves,cardamom seeds,salt and baking soda,bring it to boil.
-Let it simmer for 20-30 minutes until it reduces to half.
-Add chilled water and mix well for 8 to 10 minutes and cook for 5 minutes.
-Strain and set aside, kehwa is ready and can be refrigerated for up to 4-5 days.
-For Kashmiri tea,in kettle,add milk,almonds(crushed),pistachio(crushed),sugar (optional)and give it a good mix.
-Add kehwa and cook for few minutes.
-Finally pour the tea in cups,add almonds(crushed) and pistachio(crushed).
-Kashmiri tea is ready.
Ingredients:
2 cup water
2tbsp Green Tea
1 pinch Salt
1/4tsp Baking powder
6 Cardamoms
1piece of Star anise
2 cups of chilled water
2 cups of Milk
2tbsp of Sugar
Directions:
1.In a sauce pan add 2 cup water ,2 tbsp Green Tea ,1 pinch Salt ,1/4 tsp Baking powder and wait for water to boil and keep stirring.
2.When the water changes color add 6 cardamoms,1 piece of star anise,once 1 cup is evaporated and 1 cup is left at this point add 2 cups of chilled water ,now after adding 2 cups of chilled water ,we have to keep cooking until 1 cup is evaporated and turn off the flame.our kehwa is prepared.
3.In a 2 cup of hot milk add 2 tbsp sugar,add the kehwa while straining it,and put it your favorite cup.
Kahmiri Tea is ready.
Ingredients:
3 cups of water
2 piece star anise
1piece of cinnamon
1/2tsp Fennel Seeds
4 pieces of crushed Cardamom
2tbsp of Green Tea
1litre Milk
2tbsp Sugar

Directions:
1.In a saucepan add 3 cups of water,2 piece star anise,1 piece of cinnamon ,1/2tsp Fennel Seeds ,4 pieces of crushed Cardamom and 2tbsp of green tea.
2.Boil it until half water left and strain it.
3.Turn on the flame , in a sauce pan add 1 litre milk and 2tbsp of sugar and boil it and after 2 minutes add green tea kehwa that we prepared and boil it and in last add pinch of pink color ,after one boil pour it in cups and garnish it with pistachios.

Ingredients:
-Water 2 Cups
-Darchini (Cinnamon stick) 1
-Hari elaichi (Green cardamom) 10-11
-Laung (Cloves) 3-4
-Badiyan ka phool (Star anise) 1-2 pieces
-Namak (Salt) ½ tsp
-Kashmiri tea leaves 2 tbs
-Baking soda ¼ tsp
-Chilled water 2 Cups
-Chilled water 3 Cups
-Doodh (Milk) 3 Cups
-Pista (Pistachios) sliced 1 tbs
-Badam (Almonds) sliced 1 tbs
-Pista (Pistachios) sliced
Directions:
-In a saucepan,add water,cinnamon stick,green cardamom,cloves,star anise,salt,Kashmiri tea leaves, baking soda and mix well,bring it to boil and cook on medium flame until it reduces to ¼ cup of its quantity and keep stirring with ladle in between.
-Add chilled water and repeat the process of mixing and cooking until it reduces to ¼ cup of its quantity.
-Add chilled water and mix well,bring it to boil and cook on medium flame until it reduces to 2 cups & keep stirring with ladle then strain.
-Makes 2 cups of kehwa and enough for 6-8 cups and can be stored in refrigerator for up to 1 week.
-In a kettle,add milk and bring it to boil,add prepared kehwa (¾ cup or as required), mix well and cook on low flame for 2-3 minutes and keep stirring with ladle continuously.
-Add almonds, pistachios and mix well.
-Garnish with pistachios & serve with sugar or salt!

Ingredients Kashmiri Tea
Milk 1 liter
Almonds Crushed 20g
Pistachios Crushed 20g
Kashmiri Tea Leave 3 tbsp.
Star Anise 3 pieces
Cinnamon 1 piece
Cardamoms 7 pieces
Baking Soda ½ tsp.
Cold Water 2 glasses
Sugar as per taste
Salt as per taste
Method of Kashmiri Tea
1.In a pot, add water, Kashmiri tea leaves, star anise, baking soda, cinnamon, cardamoms and salt.
2.Let the mixture simmer and boil it until the water is reduced to half.
Now add 2 glasses of cold water during making the Kahwah. Stir the mixture and let it simmer for 5-7 minutes. Now Kahwah is ready.
3.In another pot, add milk, almonds, pistachios and sugar and boil it for 5-7 minutes.
4.Now add Kahwah and boil it for 12-15 minutes on low flame.
5.Your tasty Pink Tea Recipe is now ready to serve.
6.Winter Special Pink Tea
For Kehwa:

7.Street Style Kashmiri Tea
Ingredients for kashmiri chai:
3 tbsp Kashmiri tea leaves
1/4 tsp Baking soda
4 cups Water
5-6 Green cardamom
2 tbsp Sugar
1/4 tsp Salt
2 ½ cup Milk
1 ½ cup Kehwa
Pistachio chopped (for garnish)
Almonds chopped (for garnish)
Directions for Kashmiri tea:
1.Add water in a saucepan, add Kashmiri tea leaves, baking soda and bring it to boil.
2.Cook for 15 to 20 minutes or until kehwa reduce to half of its quantity.
3.Turn off the flame and add chilled water then beat it for 10 to 15 minutes.
4.Turn on the flame and add green cardamom and beat for 10 to 15 minutes more.
5.Strain the kehwa.
6.In a saucepan add milk, let it cook for 3 to 5 minutes. Then add salt, sugar, kehwa and bring it to boil.
7.Beat it well. Garnish with pistachio, almonds and serve hot.
8.Street Style Masla Tea
Ingredients for Masala tea:
5-7 Cardamoms
4-5 Cloves
2 Star anises
5-7 Peppercorns
2 tbsp Tea powder
1 inch piece Ginger
1/2 stick Cinnamon
1/4 tsp Nutmeg powder
1 tsp Fennel seeds
2 cups Milk
2 cup Water
2 tbsp Sugar
Directions for masala tea:
1.In a pan boil water, add cardamom, cloves, star anise, peppercorn, ginger, cinnamon, nutmeg, fennel seeds and let it boil for 3 to 5 minutes.
2.Then add tea powder and boil it again.
3.Add milk and sugar in last. Cook until milk boils. Strain and serve.
9.3 Minute Pink Tea(Shadion wali gulabi chai)
Water 1.5 liter
Cloves 8-10
Green cardamom 12 - 15
Star anise 3
Kashmiri chai 3tbsp
Salt 1/2tsp
Baking soda 1/4tsp
Ice cubes 1.5 cup
Milk 1cup
Dry milk powder 2tbsp
Dry Rose petals as required

5.Cook it for 4-5 minutes and mix well to get a creamy and frothy texture of tea
your tea is ready garnish it with nuts and dried petals .
10.Herbal Tea
Herbal Tea (for cough and cold) Recipe:
3 cups Water
4 Cloves
2 Cinnamon Sticks
1 tsp Fennel Seeds
1 tbsp Ginger
1 Bay leaf
1 tbsp Orange or Lemon zest
4-5 Basil Leaves
4-5 Black pepper
Honey to taste
2 Green cardamoms
Directions:
1.In a pan add water and bring it to boil.
2.Add all the spices and let it simmer for 6-8 minutes on medium flame.
3. Strain the tea and add honey.
4.Drink ¼ cup at a time and twice a day.
