1.Qeema Samosa Recipe by Food Fusion

Ingredients:

-Oil 1-2 tbs

-Mince 250 gms (Beef/mutton)

-Ginger garlic paste 1 & ½ tbs

-Green chilies chopped 3-4

-Coriander seeds roasted & crushed ½ tbs 

-Red chili powder 1 tsp or to taste

-Salt 1 tsp or to taste

-Red chili crushed ½ tbs

-Cumin seeds roasted & crushed ½ tbs 

-Fresh coriander chopped ½ Cup

-Onion chopped 200 gms

-All-purpose flour 2 tbs 

-Water 1 tbs or as required

-Samosa patti/Manda patti 

-Cooking oil for frying

 

Directions:

-Add oil to a frying pan, mince, and stir until the mixture changes colour.

-Add the following ingredients and combine well: cumin seeds, red chilli powder, salt, ginger garlic paste, green chilies, coriander seeds, and crushed red chilies. Cook for 4-5 minutes.

-Mix well after adding fresh coriander.

-Add the onion and stir thoroughly for 2 minutes.

-Allow it to cool.

-Combine all-purpose flour, water, and stir to produce a smooth paste in a small basin.

-To convert a samosa or maida patti into a pocket, add filling to the middle, roll it into a cylinder form, and cover the corners with a paste made of all-purpose flour and water.

-Make more samosas in a same manner (makes 15-16).

-Heat the oil in a wok, then fry the samosas until they are golden brown.

-Can be frozen for up to one month in an airtight container.

Ingredients

- Carrot shredded 1 cup

- Cabbage shredded 1 cup

- Chicken boiled and shredded 1 cup

- Capsicum shredded ½ cup

- Salt ½ tbsp. (to taste)

- Red chili 1 tsp.

- Coriander 1 ½ tsp.

- Turmeric ¼ tsp.

- Chaat masala ½ tsp.

- Ground spice ½ tsp.

- Ginger garlic paste 1 tsp.

- Oil

- Samosa Patti 12-15

- Egg for gluing

- Cheese cut in cubes

- Water As per required


Directions:

- Boil and shred chicken. Separately shred every veggie.

- Heat the oil in a skillet, add the garlic, sauté it, then add the chicken and combine thoroughly. Start by adding carrots, then add capsicum. Cover after adding a small amount of water. Give it a minute or two to cook. Sauté the cabbage while adding all the seasonings. Mix well. Pull out and let the mixture to cool.

-Take a patti for a samosa, fold it, and stuff it with masala. Add the cheese cube to the chicken and vegetable mixture before using an egg to bind the patties together. Do this for each samosa.

- In a wok, heat oil. Samosas should be fried till golden.

-Chicken Cheese Vegetable Samosa are ready to serve.

Ingredients for dough: 

2 cups All-purpose flour 

1 tsp Salt 

2 tbsp Cooking oil 

1/2 tsp Carom seeds 

Water as required 

Ingredients for Filling: 

1 kg chicken mince

1 tsp Red chili powder 

1 tsp Whole spices powder 

1 tsp Cumin powder

 1 tsp Coriander powder 

1 tbsp Ginger garlic paste 

1/4 cup Coriander leaves 

1 tsp Turmeric powder 

1/4 cup Onion (chopped) 

1 cup Cream 

1/4 cup Green capsicum (chopped)  

1/4 cup Red capsicum (chopped) 

1/4 cup Orange capsicum (chopped) 

Oil as required 


Directions for dough: 

-In a bowl, combine the flour, salt, carom seeds, and oil.

-When necessary, add water and knead the dough. Give it a 10- to 15-minute break.

-Heat the oil in a pan, then add the onion and cook until it is transparent.

-Once the water has dried up, add the chicken mince and ginger-garlic paste. Cook for 15 to 20 minutes.

-Next, for the final five to ten minutes of cooking, add salt, turmeric, red chilli powder, garam masala, cumin powder, and coriander powder.

-After that, stir in the bell peppers, capsicum, and coriander leaves.

-Add the cream last and boil it for 2–3 minutes. Your filling is now prepared.

-Take some dough, shape it into a chatai, and then stuff it with chicken filling.

-In a skillet with hot oil, shallow fried the food.

Chatai Keema Samosa ready to serve.

Ingredients:

400 gram all purpose flour

1/4tsp salt

1/4tsp ajwain

4tbsp melted oil

1tbsp coriander

1tsp cumin

1/2tbsp cumin powder

1tsp crushed chilli

1/2tsp chilli powder

Salt according to your taste

1tsp turmeric powder

3tbsp cooking oil,

1 small chopped onion 

1tbsp anar dana  add

1tbsp chopped green chillies 

and 2 tbsp chopped cilantro

1/4 cup mashed potato


How to make?

1.400 gram all purpose flour ,1/4tsp salt,1/4tsp ajwain ,4tbsp melted oil and mix all ingredients well ,slowly add water and knead the flour in medium way not too hard and not too soft and keep it for 25 minutes.

2.in a bowl add 1tbsp coriander 1tsp cumin,1/2tbsp cumin powder,1tsp crushed chilli ,1/2tsp chilli powder ,Salt according to your taste,1tsp turmeric powder

3.Turn on the flame, In a pan add 3tbsp cooking oil, 1 small chopped onion for 25 to 30 seconds ,add all the above mentioned masala and add 1tbsp anar dana and cook it for 1 minute and add chopped green chillies and 2 tbsp chopped cilantro,add 1/4 cup mashed potato ,mix well and cook for 1 minute.

4.Now knead the dough and make small balls,now roll the balls and make a fine sheet in round shape ,cut the round sheets into halfs and fill the potato mixture and carefully make a samosa shape and deep fry until golden brown.

Street style Samosa ready to serve.


5.Chicken Donuts Recipe

Ingredients of chicken donuts: 

-500g Chicken boneless 

-1 cup Potato boiled 

-1/4 cup Green capsicum 

-1/4 cup Red capsicum 

-1/2 cup Onion (shredded & squeezed) 

-1/2 cup Coriander leaves 

-2-3 Green chilies 

-1 Egg yolk 

-1 tsp Ginger paste 

-1/2 tsp Black pepper (crushed) 

-Salt to taste 

-1 tbsp Chili flakes 

-1 tsp Cumin (crushed) 

-2 tbsp All-purpose flour 

-1 tbsp Corn flour 

-1/2 cup Mozzarella cheese 

-1/2 cup Cheddar cheese 

-2 Eggs (for coating) 

-Bread crumbs as required (for coating) 


Ingredients of cheese sauce: 

-3/4 cup Milk 

-1/2 cup Mozzarella cheese 

-1/2 cup Cheddar cheese 

-2-3 tbsp Mayonnaise 

How to cook?

-Chicken, potatoes, green and red bell peppers, coriander leaves, green chilies, chilli flakes, salt, cumin, onion, egg, flour, corn flour, garlic paste, and black pepper should all be added to a food processor.

-Well-chop each component.

-Remove the mixture into a bowl, then stir in the mozzarella and cheddar cheese.

-The mixture should be thoroughly blended before being placed in the freezer for 10 to 15 minutes.

-Take a small amount of the mixture, grease your hands, and shape it into a doughnut.

-Keep it frozen for five to ten minutes.

-Each donut is first dipped in egg, then in crumbs.

-may be frozen for up to two weeks.

-Fry till golden brown in heated oil.

How to make cheese sauce:

-Half a cup of milk and mozzarella and cheddar cheese are heated in a pan.mix it thoroughly.

-Mix in the mayonnaise thoroughly.

-Mix thoroughly after adding 1/4 cup of milk.

-Sprinkle some finely chopped bell peppers on top as garnish after drizzling the glaze over the doughnuts.

Chicken Doughnuts are ready to serve.

-Serve with ketchup or cheese sauce.

Ingredients:

-Cooking oil 2-3 tbs 

-Green onion white part chopped ½ Cup 

-Ginger garlic paste 1 & ½ tsp 

-Capsicum julienne ½ Cup 

-Chicken boiled & shredded 2 Cups 

-boiled as per pack’s instructions) 

-Salt 1 tsp or to taste

-Black pepper crushed ½ tbs 

-White pepper power 1 & ½ tsp 

-Soy sauce 2 tbs 

-Chilli sauce 2 tbs 

-Maida (All-purpose flour) 2 tbs 

-Water 2 tbs 

-Roll sheet/Manda patti as required 

-Cooking oil for frying 


Prepare Chicken & Spaghetti Rolls: 

-In a wok, combine cooking oil, the white part of the green onion, and the ginger garlic paste.

-Add the chicken, capsicum, and mix well.

-Spaghetti, salt, black pepper, white pepper, soy sauce, and chilli sauce should all be added. Stir everything together and cook for a minute.

-Let it air out.

-Combine all-purpose flour, water, and whisk together in a small bowl.

-The flour slurry is prepared.

Chicken & Spaghetti Rolls are ready to serve.


7.Chicken and Cheese Bread Rolls


Ingredients:

-Chicken boiled & shredded 1 Cup

-Mayonnaise 2 tbs

-Tabasco sauce 1 tbs

-Black pepper crushed 1 & ½ tsp

-Paprika powder ¼ tsp

-Garlic powder 1 tsp

-Onion powder ½ tsp

-Red chili powder 1 tsp or to taste

-Capsicum chopped 2 tbs

-Cheddar cheese grated 1 Cup

-Mozzarella cheese grated 1 Cup 

-Salt ¼ tsp or to taste (optional)

-Bread crumbs grinded 1 Cup or as required

-Eggs 3

-Salt ¼ tsp or to taste

-Mixed herbs 1 tsp

-Bread slices 10-12

-Cooking oil for frying

Directions:

-In a mixing bowl, combine the chicken, mayonnaise, Tabasco sauce, black pepper crushed, paprika powder, garlic powder, onion powder, red chilli powder, capsicum, cheddar cheese, and mozzarella cheese.

-Mix in the salt and set aside.

-In a mixing bowl, combine the eggs, salt, and herbs. Mix well and set aside.

-Place bread slices on a work surface, cut the edges with a knife, and roll out with a rolling pin.

-Wet the edges and filling in the centre, then roll out and seal the edges.

-Now coat in bread crumbs and dip into beaten eggs (makes 10-12).

-Can be stored in the freezer for up to 2 weeks.

-Heat cooking oil in a wok and fry until golden brown.

-Grease a baking tray with oil and place bread rolls on it.

-Bake for 10-12 minutes in a preheated oven at 180 C.

Chicken Bread Rolls are ready.


8.Pizza Cutlets Recipe by Baba Food RRc

Ingredients:

2tbsp oil

1/2tsp white Cumin

1/2tsp Cumin powder

1/4tsp garam masala powder

1/4tsp crushed chillies

1/4tsp Turmeric Powder

1/2tsp red chilli powder

salt according to your taste

1/4 kg boneless chicken boiled and shredded

1/2 kg boiled mashed potatoes 

2tbsp chopped cilantro

3 tbsp flour 

1/2 tsp garam masala 

1/2tsp cumin powder,

1/2 tsp red chilli powder 

salt according to your taste

1/4 tsp black pepper 

1/2 tsp oregano

1 packet of mozzarella and cheddar cheese


How to cook?

1.In a pan add oil ,1/2 tsp white cumin and saute it for 20-25 seconds ,1/tsp Cumin powder ,1/4 tsp garam masala powder ,1/4 tsp crushed chilies ,1/tsp Turmeric Powder ,1/2 tsp red chilli powder ,salt according to your taste ,add  a bit of water and saute it for seconds ,now add 1/4 kg boneless chicken boiled and shredded and cook it for 1 minute, 1 tbsp chopped carrots ,2 tbsp finely chopped capsicum ,1 medium half chopped tomato and mix well and cook it for 1 minute.

2.In a bowl add add 1/2 kg boiled mashed potatoes ,2tbsp chopped cilantro and add 3 tbsp flour ,1/2 tsp garam masala ,1/2tsp cumin powder,1/2 tsp red chilli powder ,salt according to your taste,1/4 tsp black pepper ,1/2 tsp oregano and mix well.


3.Now take a small bowl of potato mixture, press it from middle and fill it with mozzarella and cheddar cheese ,after that fill chicken mixture ,double the same  process and fold the potato mixture and this way make all balls and slowly press it to make a round medium size petti or any shape.

4.now beat 2 eggs and dip the pizza cutlets and deep fry them until golden brown.

Ramadan pizza cutlets are ready to serve.

9.Chicken Shami Kebab Recipe 

Ingredients for Shami Kabab:

-Boneless Mutton, cut into small pieces - 500 gms

For cooking mutton mix:

- Green Cardamom- 3

- Cloves- 3

- Cinnamon- 1

- Peppercorns- 6

- Mace (Javitri)- 1 small

- Shahjeera- 1/2 tsp

- Bay leaves- 2

- Turmeric Powder- 1/4 tsp

- Coriander Powder- 1/2 tsp

- Red Chillies, cut into pieces- 5

- Ginger Garlic paste- 2 tsp

- Salt- 1 tsp

- Chana Dal (split bengal gram) - 1/2 US cup measure (after soaking 1 US cup measure) 

- Oil- 1 tbsp

- Water- 150 ml


Other Ingredients:

- Coriander leaves, fine chopped- 1 tbsp

- Mint leaves, fine chopped- 1 tbsp

- Green Chillies, fine chopped- 1 tbsp

- Oil - 2 tbsp + oil for pan frying the kebabs


Preparation:


-Place the boneless mutton pieces in a pressure cooker. Combine all of the other ingredients needed to cook the mutton. Cook on high heat until the first whistle, then on low heat for the remaining three whistles. This will take about 16-18 minutes (if you don't have a pressure cooker, combine all of the ingredients in a pan and cook covered on low heat for 45-60 minutes, or until the meat and dal are soft).

-Once the pressure is released, open the lid and dry out any excess water on high heat for 7-8 minutes.

-Transfer it to a bowl and set aside to cool completely.

-Place the mixture in a large grinder/blender jar and grind until it is uniform.

Process:

-Exchange Add the ground kabab mixture, finely chopped coriander leaves, mint leaves, and green chilies to a mixing bowl.

-Mix thoroughly to ensure that everything is evenly distributed.

-Oil your palms and begin shaping the kababs. Take a handful of the mixture and press it between your hands to firm it up.

-Roll the mixture between your palms to form a round ball, then press and shape it into a kabab.

-Repeat with the remaining ingredients and set aside on a plate.

-You can keep it in the refrigerator until you're ready to fry it.

-For frying, heat a pan with enough oil (about 1 cm) to shallow fry the kababs.

-Heat the oil and place the Shami kababs side by side to prevent them from sticking.
